FOOD SENSITIVE PATIENTS: PLEASE READ THIS CAREFULLY
You have been shown to have food sensitivities. The foods on the list which have been marked should be avoided for the next few weeks until all traces have been eliminated from your system.
In some instances the body reacts adversely to being deprived of things which it is used to having, so do not worry if you feel unwell for a few days. Try to take life quietly if this does happen, but DO MAKE CERTAIN THAT YOU REPLACE THE FORBIDDEN FOODS BY OTHERS.
Many patients feel unwell simply because they are hungry. The following list shows you how to use many of your normal recipes by replacing a forbidden food with something you are allowed to eat. Some of the foods - particularly wheat flour replacement - will he strange to you, but they are avail-able in Health Food Shops, shops catering for Vegetarians, kosher food shops, and little stores which supply foods used in Indian and Oriental cooking.
Be adventurous with your cooking and, above all, do not go around feeling’ deprived'. Enjoy the new foods and perhaps let your friends try your experiments; you will find they will offer other suggestions or perhaps bring their own samples for you to try.
Rules of thumb when buying packet foods
1. Read the 'ingredients' list carefully. If you are doubtful about anything, do not buy.
2. If you are wheat (or grain) sensitive, make your own soup and stock. Stock cubes have small amounts of wheat in them.
3. Make up your own breakfast muesli using grains y w are allowed and add nuts, raisins, grated apple. Make up your own nibble mix from all the goodies available in the Health Food shops.
4. Unless you are sensitive to apples, always carry one with you so that if you feel hungry you
can munch the apple.
Remember to carry your own special tea bag with you - restaurants will gladly serve a jug of hot water.

A FEW IDEAS
A cream or milk to put on your breakfast cereal
2 ripe bananas, 1 egg white, water - whisk to required consistency in a liquidiser. (Will not keep)
Coconut milk: Rake 100 gms of creamed coconut into pt hot water, stir until dissolved, allow to cool, and dilute to taste.
Instead of breadcrumbs for coating foods (i.e. egg & breadcrumbs)
Try oats or ground rice.
Crumble Topping
Use Cornflakes, rice crispies. or rolled oats. Add ground almonds or sesame seeds for added flavour.
Biscuits
Flapjacks and oatmeal cookies (Macaroons)
Start thinking of other alternatives - you will be surprised how many y w already know about
Wheat-free Cake and Biscuit flour
2 oz. ground almonds
2 oz. rice flour
1 oz. soya flour
1 oz. coconut
Mix together and use instead of 4 oz. of wheat flour in any cake or biscuit recipe.
Wheat-free Bread
Breads made from other flour are not very successful. However, scones made from a mixture of rye and oat flour come out quite nicely. For sweeter ones add sugar (fructose) and dried fruit.
Ryvita (make sure it is the Rye one) Scanda Crisp (also Rye)
Scottish Oat Cakes - read ingredients as they sometimes contain wheat, or make your own.
Rice Cakes
These all make good bases for spreading things on and will temporarily take the place of bread.

ROTATION DIETS
The rotation diet, sometimes called the rotary diversified diet, can serve three purposes: firstly as a diagnostic tool it can unmask hitherto unrecognised hidden (masked) food allergies: Secondly, it makes it less likely that the patient will develop new allergies to foods which he is regularly in contact with, having substituted these foods for allergic foods; thirdly, it helps the multiple food allergic patient to lead a reasonable life style and to maintain tolerance to the food he is already able to eat This therefore means that each individual patient has to have an individual food rotation worked out to suit that patient's particular needs.
Once the patient has reached the stage of active sensitisation and/or latent sensitisation, he is able to tolerate, at the most, two exposures in the averagely sensitive patient, and in the very sensitive patient, the so-called brittle patient, one exposure of the food or chemical, without producing any adverse reactions. This food cannot be reintroduced to the patient for another 4 days. On taking it again after this period of time the patient will again get away with no adverse affects. The idea therefore of the rotary diversified diet, enables the patient to at least maintain adequate nutrition otherwise the tendency is for the patient to become malnourished, and indeed this can happen alarmingly quickly. So if at all possible, a rotary diversified diet should be designed for each patient, and the patient should be encouraged to follow this diet. In clinical practise this technique works well in the average ecology patient. Unfortunately it is of very limited use, if indeed any use at all, in the brittle patient. These patients pose a difficult clinical problem, and a number of other tech¬niques have to be tried. These will be described later in the course.
The principles of rotation diets are as follows:
1. Eat unprocessed foods, as naturally (organically) grown as possible. This can be difficult to
carry out, but as a general principle, the patient should avoid processed foods of any sort and
- should eat fresh foods as much as possible. All sauces etc., must be avoided. The foods should be as simple as possible and should not be composite foods; for example foods such as meat balls, sausages, etc., should be avoided as they contain many different foods therefore the patient should be advised to eat single foods.
2. The diet should be as varied as possible. This can become very difficult in the patient with a large number of food allergies, and demands considerable ingenuity on the part of the doctor and patient. The services of an imaginative dietician are invaluable in this regard. As a general principle if you are having difficulty in varying the diet, or even formulating a 4 day rotation at all, then look at the foods consumed in other countries. Perhaps an oriental or a tropical diet will provide much needed ideas for additional foods which can be added into the rotation. Often these foods will be of an unusual or exotic nature; for example avocados, mangos, or papayas. This will mean that it will be more expensive for the patient to eat such a diet, but in many cases this is the only way in which the patient is able to lead a normal existence, and therefore in these circumstances this extra expense is more than justified.
3. The diets should be rotated; this is because patients with food allergy appear to have a predisposition to develop further allergies to foods which they eat regularly. Therefore in the practical situation, after having unmasked the sensitivities mat the patient first came with, and the patient then changes his diet, he often becomes sensitive to the foods to which he has changed he eats these regularly, which is often what happens in practise if rotation is not encouraged. The tendency to develop further allergies is as marked with common foods to which the patient was not initially sensitive, as it is to the more exotic foods. This therefore makes it more important that a rotation of some sort should be introduced. The main aim of a rotation diet is to allow the body to recover from the effects of a food before eating it again,

and in general it takes up to 3 days for a meal to pass through the intestine; this is therefore why as a rule of thumb, a 4 day rotation is adequate. It is possible to get away with a 3 day rotation and a 7 day rotation is a council of perfection, but often is not possible in a multiply food allergic patient, and this is often the situation encountered in clinical practise.
The foods that are eaten in the rotation can be eaten in any form, for example wheat, com, beef etc., are all available in many different forms. This can add variety to an otherwise seemingly monotonous diet.
The food family should be rotated. Lists of food families will be detailed later. The principle of rotating food families is that people who are allergic to one member of the food family such as potato, are often also allergic to other members of the potato family such as tomatoes or peppers. If a patient is only sensitive to one member of the particular food family, again say potatoes, but not sensitive to other members of this family, then it can be assumed that he will more quickly develop sensitivities to other members of the potato family than he will to other members of unrelated food families. As a rule of thumb rotation of food families should be done on a minimum of a 2 daily basis.

5. In any rotation diet, the foods to which the patient is not allergic must be the sole constituents initially. As and when the patient eventually reaches the stage of active or latent sensitisation and is therefore able to tolerate a single, or in some cases double exposures of the food to which he was initially sensitive, and to reach this stage for the average patient takes some thing in the order of 4 to 6 months, then and only then can the foods to which the patient was initially found to be allergic, be introduced into the food rotation diet If on reintroducing these foods, the patient experiences symptoms again, then clearly these foods will again have to be removed from the rotation. This can happen in the case of a fixed sensitivity to food.
The majority of food sensitivities are not fixed, and are reversible, so the reintroduction of initially allergic foods can be considered as a practical possibility after approximately 6 months of absti¬nence in the average ecological problem. Please note if you think you may have a dairy intolerance please get check to see if it is just cows milk or lactose you are intoleranct too, as it may just be the lactose in the milk.. or you may be fine with goats and sheeps but just not cows, so please get checked as milk is very important to your diet.

SOYA-FREE DIET
You are sensitive to soya and should therefore avoid the following:
1 BAKERY GOODS:
Occasionally soya bean flour is used as an ingredient of dough mixtures for bread, rolls, cakes and pastries. This keeps them moist and saleable for several days longer.
2. SAUCES:
Soya sauce, Lea & Perrins Sauce, Worcestershire Sauce.
3. SALAD DRESSINGS:
Many salad dressings and mayonnaise contain soya oil, but only state on the label that they contain vegetable oil.
4. MEATS:
Pork, sausage and luncheon meats may contain soya beans.
5. SWEETS:
Soya flour is used in hard sweets, nut sweets and caramel. Lecithin is invariably derived from soya bean and is used in sweets to prevent drying out and to emulsify the fats.
6. SOYA MILK SUBSTITUTE

Cereals such as Weetabix and Cornflakes do contain sugar.

Jam Whole Earth and Meridion ranges (sold in most big supermarket
chains and health food shops). Waitrose Pure Fruit Spread.
Peanut/Nut Butters Meridion and Whole Earth Range.


Egg Free Diet

EGG - FREE DIET
Some people are only allergic to egg white, others to egg yolk, and some are allergic to the whole egg. Grated apple, pectin and methylcellulose, hemicelluloses are sometimes used as binders to replace eggs. You may see albumen on ingredients lists sometimes. This means egg white.
E322 indicates the possible inclusion of egg, and foods should be avoided where this E number is listed on the label.
The nutrients which eggs add to the diet can be replaced by fish, liver and meat. Use thin salad dressings instead of mayonnaise etc. It is possible to make some kinds of cakes without egg at all.
When eating out, order very plain food, avoiding batter, soups, sauces and thick dressings as well as desserts, gateaux, ice cream and pastry sweets. Generally speaking, waiters and restaurant staff have no idea of what is actually in the food they serve, so asking the waiter whether there is any egg in a dish is not a very reliable way of finding out.
Some pastas/noodles are made without egg. Look at the ingredients boxes and make a list of the ones which are suitable for this diet as you come across them. Make your own pastry at home and be sure it does not contain egg. Make your own drop scones, without the egg ingredient, adding more milk to make up the weight. They will be a little rubbery compared with the type made with egg. but are very acceptable. Scones can be made with raising powder and bound with milk or yoghurt.
Some dishes which are egg concoctions will just have to be avoided, egg soufflés. Use grated apple to bind homemade burgers. Fish can be dipped in milk then flour or cornflour instead of egg batter, • Before light frying in polyunsaturated oil.
On the whole, this is an easy diet to follow and because egg is found in a great number of processed and junk foods it could mean a much healthier diet all round. Eating out is the most difficult part of an egg-free diet.

YEAST-FREE DIET
Yeasts are part of an enormous family of fungi that includes mushrooms, baker's yeast and antibiotics. Some illnesses are caused by fungus, eg farmer's lung and Candida (thrush). A feature to look for is food which has been around some time, because yeasts need time as well as the right conditions to grow. Many yeasts are invisible to the naked eye. Any products which are fermented will have made use of yeast in their processing, eg wine. Preserved or dried foods will undoubtedly have yeasts on them, even if they are treated to prevent decay. Some yeasts will be unavoidably taken in as they are everywhere in the air. Clues to the presence of yeast are the descriptions 'melted', 'dried', 'pickled', cultured', and 'fermented'.


Eating out is not difficult provided cheese dishes are avoided and any food with vinegar or alcohol as well as pickles and mushroom/truffles. Bread also has to be avoided, but some plain crispbreads may be acceptable. Salads should not have dressing put on them. You can have Grilled meat without gravy, unless the gracy has no yeast then this is ok, ask at the restuarant, plain boiled or steamed vegetables is fine,, plain grilled fish and omelettes are the safest. Fruit desserts are best avoided and so, of course, is cheese and biscuits.

This diet will reduce the amount of calcium, protein, fibre and fat consumed. To combat this, increase the milk consumption to double. ( you may of been advise to avoid cows milk so please use an alternative such as rice milk, soya milk, cocunut / almond milk, or goats milk if this has been advise and there is no allergy to it. Make wholewheat soda bread and scones at home, but eat within a few minutes of baking. Using a raising powder that does not contain cream of tartar. Rye crispbreads can be eaten instead of bread, also wholewheat breakfast cereals such as Shredded Wheat and Puffed Wheat and rice. (Omit the cereals if they cannot be tolerated). Increase the amount of vegetables eaten, especially the high potassium ones. All fruit eaten should be thoroughly washed first, dried and then peeled and eaten immediately. Keep the peel well away from the flesh of the fruit or you may contaminate it with yeast. Make oil/lemon dressings for salads with fresh lemon juice.


The main problem with this diet is the omission of bread as this could lead to a deficiency of B-complex vitamins. scones can be made with wholewheat flour. An increase in the amount of liver to 4 oz (lOOg) per week would also help. Natural supplements of B-complex vitamins will probably be made from yeast In this case synthetic B vitamins would be more suitable if a supple¬ment needs to be taken. Fruit juices should be made from fresh washed and peeled fruit and drunk immediately they are made. If the amount of wholewheat flour used for suitable baking is not in¬creased to at least 1½ lbs (¾% kilo) per week there is a risk of too little cereal fibre in this diet. All in all quite a difficult diet to follow, especially as no alcohol whatsoever should be taken.

Please note that There's lots of books on the market from either ebay, amazon etc about yeast free diets and candida albicans etc. please read up and inform yourself on as much information as you can as this can be a life long diet plan if you yeast is your problem. below is the basic yeast free diet but if you think you have candida albicans a yeast overgrowth of the gut, the diet will be more detailed. You will need to get a book as mentioned above on it or come in for a consultation so we can discuss it as sugars, and cows dairy products need to be avoided too.

To Test for Candida Alibicans / Yeast overgrowth

Free Candida Test
The source of this test is unknown but it has been around a long time and is quite reliable in the diagnosis of Candida albicans overgrowth.

However When you come for an appointment for an allergy test food intolerance test, I will also take into consideration other symptoms and signs of Candida albicans / Yeast overgrowth. I also have a homeopathic test i use with the vega machine alongside other tests.

It is known as the Candida saliva test or the Candida spit test.

First thing in the morning, before you put anything in your mouth, get a clear glass of water. Work up a bit of saliva, and then spit into the water. Check the water every 15 minutes or so for up to an hour. If you have a candida problem yeast overgrowth, you will see strings (like legs) traveling down into the water from the saliva floating on the top, or "cloudy" saliva will sink to the bottom of the glass, or cloudy specks will seem to be suspended in the water.

If there are no strings and the candida is still floating after one hour, you probably have candida under control. if you are using one of our recomended products, you can continue to test yourself. You will start to see fewer and fewer "strings" once you are getting it under control.

Healthy saliva will be clear, it will float on top and it will slowly dissolve into the water without any cloudiness and without sinking. There are normally some bubbles or foam present.

Candida saliva will have one or more characteristics that point to a Candida albicans overgrowth:
•Strings traveling down to the bottom of the glass
•Cloudy saliva that sinks to the bottom of the glass
•Cloudy specks suspended in the water

The more strings and cloudiness there are, and the faster it develops, the greater the Candida albicans overgrowth.

What does a test involve ?

During the consultation Over 120 substances will be tested which include common foods and drinks, E numbers, Enviromental Products, Pets, Moulds, Trees, Shrubs, Cigarettes, Vitamins and mineral will also be checked and a lot of other unusual products, We also do a candida / Yeast check, we can also test your own products and perfumes.
The equipment we use is a bio-electronic analyzer ( vega machine )which measures the body's electrical resistance to the afore mentioned substances. If a substance is causing a problem then it will effect the body's electrical resistance. The test is completely painless and is best described as a ball point pen touching the tip of your finger upon a acupuncture point

How long does it take?
A Consultation with our allergy therapist takes approximately 45 - 60 minutes or maybe on the rare occasion it may sometimes take longer depending on the severity of any food intolerance's on the individual person although the results of the test are instantaneous we may need to give the person extra nutritional advice & counseling. Who can be tested?
This test is suitable for anyone other than those with a pacemaker and any aged child subject to them being on solid foods. If it is a baby that need testing then please ring for advice, it is more difficult to test a baby but it can be done. but the parent will need to be checked first, Toddler and young children can also be tested, however it is more difficult to test a child up to the age of 7 as they get very restless so it may have to be done in 2 stages. this will be advised on enquiry

How many tests will I need?
We tend to find only one test is necessary as our trained allergy therapists are able to provide ongoing support and advise, through our dedicated help-line. However if more in-depth therapy is required Allergytest4u.com is able to offer you the service of one of it's qualified Nutritional Therapists. (This will incur a separate fee.)
It is generally advisable, however that at least one follow up appointment is made to revisit the therapist one month after the test (at a discounted cost), to monitor progress whilst carrying out any eliminations of food from your diet.
Will I have to avoid certain foods forever?

This will depend on whether your body can tolerate the food once it has been reintroduced into your diet, after an initial 4 week programme.
